First, I have to say that I guest posted over at Memoirs of a Pilgrim. So you can check out her entire site or you can just read my post. It's awesome. Okay, not really but it was fun doing a guest post for someone :) So now that that is out of the way, we're off& running towards some photos and baking adventures!
So Meghan and I have started baking on Saturday evenings. I love all treats but had stopped baking because I was sadly hooked on baking things that were incredibly bad for me ..and then eating them. I am a good baker so the things I made were delicious. Deliciously bad. While, now that I'm a fitness and nutrition guru (or something like that), I decided no longer would I ruin my own chances at success by eating really bad foods. So, I stopped baking. Until 2 weeks ago. So now, onto some photos& recaps of our baking adventures!

We were gagging at this point. Thankfully, things improved.
So, 2 weeks ago we made some blondies. They were delicious ..but we had quite the struggle trying to make them work. I'm pretty sure Chocolate Covered Katie pulled a Martha Stewart -left out some steps so that her end results were better than ours! The end result was blondies gone brunette and a lot of extras added (think chocolate frozen yogurt. Oddly delicious) just to get the stupid things to blend. If we're going to continue our baking adventures we may need a Vitamix or something.

We figured that the blender could manage to at least sort of make the ingredients 'smooth' ..yeah. We had more faith in both ourselves and her 40yr old blender than was probably smart. We used all the settings .. we thought it might explode. Thankfully, no explosions.

So, with the help of A LOT of almond milk& frozen yogurt, we managed to blend the chickpeas and whatever other ingredients were involved. We were feeling less-than-confident at this point in the evening. I think we may have started pouring stronger drinks because everything seems less tragic when you're drunk! Uncertain how these would turn out, I proceeded to pour the result into a baking pan.

So, after pouring our no-longer CCK recipe out into the pan the only thing left to do was wait for the 15 minutes or however long. So wait we did. While watching Extreme Makeover: Weight Loss Edition. It was interesting ..I decided I would get fat and then lose a lot of weight in order to win the 'rewards' they were!! Trips to England .. season tickets to their favorite sports teams. Must be nice. So after all this, the cookies were ready. No longer blonde, but brunette!

Success! We headed out to listen to some local music shortly after devouring most of these. Didn't even feel guilty. Less calories in the whole pan than in the one chocolate chip cookie I'm currently eating (definitely not a healthy recipe treat)!
So then the following Saturday we attempted again. Made some sugar cookies (70 calories each) and some cake batter drops. We were much more successful this time around and managed both treats with minimal setbacks. In fact, the only setback was that we had no butter. A quick trip to the store fixed that and off to the races we went. No alcohol involved in this adventure due to a 8AM wake up call and 10AM race time! I have 2 photos. Both of these were DELICIOUS. I could easily live off of the cake batter cookie drops. They don't look all that appealing but boy oh boy ..so good!
